This is another no-brainer, easy-breezy, delicious, healthy dinner.  Jonathan was NOT happy when I told him we were having “Roasted Tomato & Red Pepper Soup” for dinner.  His exact words were, “I’m not very excited about that, do we have any other options?” Ha! No.
