I might be silghtly obsessed with Latkes. I figured, why not combine them with one of my favorite vegetables?….eh, I mean fruits….In a culinary context, zucchini is treated as a vegetable; it’s usually cooked as a savory dish. Botanically speaking, zucchini is a fruit, being the swollen ovary of the zucchini flower. Neat right? We eat a lot of zucchini in our house. It is a good source of potassium—an important electrolyte. Its peel is good source of dietary fiber. One cup of zucchini contains about 25% Daily Value of Vitamin C. Zucchini is very low calorie; only 21 calories per cup. Love it! My husband and I ate this entire batch between the two of us. SO GOOD.
Cheesy Zucchini & Potato Latkes
Makes 8-10 pancakes
- 1 large russet potato, grated
- 2 small zucchini or 1/2 large zucchini, grated
- 1/2 medium onion
- 1/4 cup grated parmesan cheese (OR) Vegan Parmesan (see recipe below)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 egg, beaten (OR) 1 flax egg = 1 Tbs. ground flax + 3 Tbs. water
- coconut oil (OR) olive oil
Preheat oven to 450 F.
Wash the Potato & Zucchini (no need to peel). Grate the Potato and Zucchini by hand or using food processor. Squeeze the excess water out of potatoes & zucchini using your fists & a strainer, a flour sack towel, or cheese cloth.
Mince the onion.
Place the grated potato, zucchini, and finely chopped onion in a large bowl. Add egg, salt, pepper, and parmesan cheese. Mix very well. (Vegans or my dairy-free friends should omit adding “cheese” at this point and sprinkle Vegan Parm on latkes after baking). For you cheese monsters–feel free to use 3/4 cup organic shredded Cheddar cheese.
Form the mixture into about 8 patties, and place them on a baking sheet lined with parchment paper (OR) press ingredients evenly into a large pyrex casserole dish–sprayed generously with cooking spray, then flatten it out. Either way, spray or brush tops of latkes or casserole with oil of preference.
Bake on top shelf of oven for about 30 minutes or until the tops turn brown and the edges crisp. I turn off the oven after 30 mins and let them sit and crisp up a little more. Remember, all ovens are different so keep an eye on them after about 20 mins.
Serve with Homemade Apple Sauce! Enjoy!
- 1/4 cup Nutritional yeast
- 1 cup unsalted cashews
- 1 teaspoon salt
Instructions: Mix ingredients in a food processor. Sprinkle on top of Latkes when they’re done baking.
